Happy meal #21: Ma Po Tofu

One of the best things about the internet is the endless sea of recipes that exist out there. Most of my cookbooks have so far been focused on Western food and when I need to have some comfort Chinese food, I either turn to my mother or the Internet.

I was surfing through Ann’s wonderful archive of recipes when I came across the instructions for cooking ma po tofu. I really, really love tofu and I decided to roll up my sleeves and make this for dinner one night after work.

Not going to post the recipe since I followed hers to the T – except for the assorted vegetable bit. I don’t like peas and those frozen veggies are banned from the fridge because of that.

It was a simple, easy to make one-dish meal, and Mr Thick was astonished by what a mountain of food he had on his plate.
